Ingredients List
- 4 large egg yolks
- 1 tablespoon (14g) butter, melted
- 3 ½ tablespoons (50g) coconut oil, melted
- ⅓ cup (50g) confectioners Swerve (or powdered erythritol)
- 1 cup (100g) unsweetened coconut flakes
- Heaping ⅓ cup (45g) chopped pecans
- Heaping ⅓ cup (45g) chopped walnuts
- ⅔ cup (100g) semi-sweet sugar-free chocolate chips
- (Optional) Use half semi-sweet chocolate chips and half salted caramel chocolate chips for a flavor twist.
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (176°C). Line a baking sheet with parchment paper.
- Mix the Wet Ingredients:
- In a medium mixing bowl, whisk together egg yolks, melted butter, and melted coconut oil until fully combined and smooth.
- Add the Dry Ingredients:
- Stir in the confectioners Swerve, unsweetened coconut flakes, chopped pecans, chopped walnuts, and chocolate chips.
- Use a rubber spatula to gently fold everything together until evenly mixed.
- Chill the Dough:
- Place the bowl in the refrigerator for 30–45 minutes to let the mixture firm up. This helps the cookies hold their shape during baking.
- Form the Cookies:
- Once the dough is set, use a cookie scoop or tablespoon to portion out 12 even balls of dough.
- Arrange them evenly on your prepared baking sheet, leaving a bit of space between each cookie.
- Bake:
- Bake for 8–10 minutes at 350°F (176°C), or until the cookies are lightly golden brown around the edges.
- Cool and Serve:
- Let the cookies cool completely on the baking sheet — they’ll firm up as they cool.
- Enjoy your keto magic cookies!
