Ingredients List

  • 4 large eggs
  • 1 cup heavy cream
  • 2 tbsp butter (optional for richness)
  • 1 tbsp unflavored gelatin
  • 3 tbsp water (for blooming gelatin)
  • Pinch of salt
  • Optional (for sweet carnivore-keto version):
    • 2–4 tbsp allulose or monk fruit
    • ½ tsp vanilla extract

Instructions

1. Bloom the Gelatin

  • Add the gelatin to a small bowl with 3 tbsp water.
  • Let sit 3–5 minutes until thick and spongy.

2. Heat the Custard Base

  • In a saucepan on LOW heat, whisk eggs, cream, butter, and salt.
  • Stir continuously until mixture thickens slightly (DO NOT boil).
  • Remove from heat.

Add Gelatin

  • Whisk bloomed gelatin into the warm custard until fully dissolved.
  • Add optional vanilla or sweetener if using.

4. Pour into Molds

  • Pour custard mixture into silicone molds, ice cube trays, or a small dish.

5. Chill

  • Refrigerate 2–3 hours until fully set.
  • Pop out custard bites and enjoy chilled.
