Ingredients

  • 2 medium zucchinis, grated
  • 3 large eggs
  • 3 tablespoons flour
  • 2 medium onions, diced
  • 1 chicken fillet, diced
  • 3 bell peppers (any color), diced
  • 2 cloves garlic, minced
  • 120 g cheddar cheese, grated
  • Salt, to taste
  • Black pepper, to taste
  • ½ teaspoon cumin
  • 1 teaspoon red pepper flakes
  • Fresh parsley, chopped
  • Olive oil, for cooking

Instructions

1. Prepare the Zucchini

Grate the zucchini and place it in a bowl.

Sprinkle lightly with salt and let it sit for 5 minutes, then squeeze out excess moisture using a clean towel or paper towels.


2. Make the Zucchini Base

In a bowl combine:

  • grated zucchini
  • eggs
  • flour
  • salt
  • black pepper

Mix well until combined.


3. Cook the Chicken and Vegetables

Heat olive oil in a skillet over medium heat.

Add:

  • diced onions
  • minced garlic

Cook for 2–3 minutes until fragrant.

Add diced chicken and cook for 5–6 minutes until browned

Stir in diced bell peppers and cook for another 3–4 minutes.

Season with:

  • cumin
  • red pepper flakes
  • salt and pepper

Remove from heat.

4. Assemble the Dish

Preheat oven to 375°F (190°C).

Grease a baking dish.

Spread the zucchini mixture evenly in the dish as the base.

Add the chicken and vegetable mixture on top.

Sprinkle grated cheddar cheese evenly over everything.


5. Bake

Bake for 20–25 minutes until the cheese melts and the top becomes golden.

6. Garnish and Serve

Remove from oven and sprinkle with fresh chopped parsley.

Serve warm.

Replace flour with almond flour.
