Cherry Cheesecake Egg Rolls

INGREDIENTS:

EGG ROLLS:

  • 8 low-carb egg rolls or cheese wraps
  • 8 oz. cream cheese
  • ¼ cup Erythritol
  • ½ tsp. vanilla extract
  • ½ tsp. lemon juice
  • ¼ cup keto-friendly preserved cherry or fresh cherries

EGG WASH:

  • One egg
  • One tsp. water

OPTIONAL TOPPING:

  • Keto powdered sweetener
  • Whipped cream

INGREDIENTS NOTES:

EGG WRAPS:

  • Look for low-carb wraps like Cut Da Carb, Egglife, or other comparable goods for a keto-friendly version of egg roll wrappers. A crisp texture can also be achieved by using cheese wrappers, such as those made from mozzarella.

SWEETENER:

  • We use the keto-friendly sweetener like Erythritol, Allulose, or monk fruit to make the dessert low in carbs and keto-friendly. Allulose is a fantastic choice because it doesn’t have the cooling effect that some other sweeteners have and has a pleasant sweetness. We can adjust the quantity of sweetener according to the taste.

CHERRIES:

  • We can use fresh cherries or some keto-friendly preserved cherries. You can cut up some fresh cherries and combine them with a small amount of Keto-friendly sweetener. We have to use the cherries cautiously because their carbohydrate content is slightly higher than that of other berries.

CREAM CHEESE:

  • We can use the full-fat cream Cheese for a creamy, velvety filling. The cream cheese should be at ambient temperature and soft before we mix to get the best texture.

VANILLA ESSENCE & LEMON JUICE:

  • Lemon juice and vanilla improve the flavor profile, giving the cheesecake filling a bright, fresh taste. You may also try adding a small amount of almond extract if you would like a different flavor.

INSTRUCTION:

  1. Turn the air fryer on to 375°F, or 190°C.
  2. Place the baking paper in the basket.
  3. Grab a vessel &mix the powdered sweetener, lemon juice, cream cheese, and vanilla essence.
  4. We can beat the cream cheese until its smooth.
  5. Add fresh chopped cherries or cherry preserves to the cream cheese bowl and fold gently.
  6. Then we lay out a flat egg wrapper on the shelf.
  7. We can add 2 tablespoons of filling in the center and roll up after folding in the sides.
  8. We can put the egg rolls in the close side down manner.
  9. Then we can grab a brush and rub on the egg wash with it.
  10. Air fries these rolls for 8 to 10 minutes or till they get golden brown and we can turn the side of the roll in half time.
  11. We can garnish these Cherry Cheesecake Egg Rolls with whipped cream dusting them with ground sweetner and serve.

TIPS:

  • We should avoid packing too full or the  rolls may explode.
  • These  rolls get crispy when they get cool down; so allow them to chill somewhat before handling.
  • We can add a dash of nutmeg or cinnamon for a toasty spice twist.
