
A quick, healthy, and protein-packed snack or breakfast!
Ingredients:
- 1 ripe banana, mashed
- ½ cup cottage cheese
- ½ cup rolled oats
- 1 tsp cinnamon
- 1 tsp vanilla extract (optional)
- ½ tsp baking powder
- 1 egg
- Pinch of salt
Instructions:
- Add all ingredients to a blender or food processor and blend until smooth.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it.
- Scoop tablespoon-sized portions of the batter onto the pan.
- Cook 2–3 minutes per side, or until golden brown and firm.
- Serve warm with banana slices, maple syrup, nut butter, or yogurt
