Cinnamon Banana Protein Pancake Bites

A quick, healthy, and protein-packed snack or breakfast!

 Ingredients:
  • 1 ripe banana, mashed
  • ½ cup cottage cheese
  • ½ cup rolled oats
  • 1 tsp cinnamon
  • 1 tsp vanilla extract (optional)
  • ½ tsp baking powder
  • 1 egg
  • Pinch of salt
 Instructions:
  1. Add all ingredients to a blender or food processor and blend until smooth.
  2. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  3. Scoop tablespoon-sized portions of the batter onto the pan.
  4. Cook 2–3 minutes per side, or until golden brown and firm.
  5. Serve warm with banana slices, maple syrup, nut butter, or yogurt
