Easy keto egg mcmuffins
I recently just got a toasted oven after not having an oven for over a year! These are one of my favorite little portable breakfast items and can be customized with literally anything you want! The top ones have onion and cheese, the bottom ones have tomato, oregano, mozzarella and onion. Here’s my basic recipe:
6 eggs
splash of heavy cream/half and half OR water
salt
Whip the eggs, cream and salt in a bowl. You can add whatever veggies, meat or cheese you’d like! Spoon into a cupcake tin, pro tip: use silicone baking cups. SO easy to clean and you don’t need to grease them! If using a regular tin, spray a bit of olive oil before adding the mixture. Bake for about 15 minutes on 385 or until top is golden brown.

goat cheese & tomato
green pepper, onion & mushroom
sausage, pepper & onion
Literally endless combos. So easy and you can freeze them as well. To reheat, throw them in a toaster oven or microwave for a minute! If frozen, wrap in a paper towel before reheating in the microwave.
