Step-by-Step Instructions

Step 1: Preheat & Prep

Preheat oven to 300°F (150°C).
Line a baking sheet with parchment paper.

Step 2: Blend Cottage Cheese

Add cottage cheese to a blender or food processor.
Blend until completely smooth and creamy. This step is key for a fluffy, non-grainy texture.


Step 3: Whip Egg Whites

In a clean, dry bowl, beat egg whites with the salt until stiff peaks form.
They should stand upright when you lift the whisk.


Step 4: Mix Yolks

In another bowl, whisk egg yolks with the blended cottage cheese and baking powder until smooth.

Step 5: Fold Gently

Carefully fold the whipped egg whites into the cottage cheese mixture in 2–3 batches.
Use light, slow motions to keep as much air as possible.


Step 6: Shape

Spoon the mixture into small rounds or mounds on the prepared baking sheet, leaving space between each.


Step 7: Bake

Bake for 25–30 minutes, until set, lightly golden, and dry on top.
Turn off the oven and let the cloud bread sit inside with the door slightly open for 5 minutes to prevent collapsing.

Step 8: Cool & Serve

Remove from oven and cool slightly.
Serve warm, room temperature, or chilled.
