1 cup cottage cheese

1 cup almond flour

2 large eggs

2 cloves garlic, minced

1 tsp baking powder

1 tsp dried oregano

½ tsp salt

¼ cup shredded mozzarella cheese

  1. Preheat oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. Blend cottage cheese until smooth (this gives fluffy texture).
  3. Mix wet ingredients: cottage cheese, eggs, olive oil, and garlic.
  4. Add dry ingredients: almond flour, baking powder, oregano, salt, and mozzarella. Mix until a thick batter forms.
  5. Shape rolls: Scoop and form 8 small rolls on the tray.
  6. Bake for 25–30 minutes until golden and firm on top.
