Keto Berry Cheesecake

Like these sweetest berries or the famous cotton candy grapes, I am loving the delicious and fresh fruits that are starting to pop up. And I like enjoying cold fresh fruits as much as possible with this hot weather.

How to make this salad?

Easy enough. This recipe only takes SEVEN basic ingredients so you skip cool whip, heavy cream, or almond flour. To make this creamy cheesecake, all you need is a large bowl/a mixing bowl with fresh berries and lemon zest. Yum!

Is this cheesecake salad grain free?

Totally!

Can you use frozen fruits?

In short, yes; however, you will end up with a different consistency and texture than what the recipe suggests as it will be very watery.

Is this considered a fruit salad?

You can call it that way; however, while back, I have shared this fruit salad recipe which does not involve heavy whipping cream or cream cheese.

Raspberries, blackberries, and blueberries, I’m using a combination of three kinds of berries. With just ONE berry or a combination of TWO berries, this recipe works well. This recipe is so simple to make as you can see. And just pop this keto berry cheesecake salad in the freezer if you prefer a frozen treat, for an hour or so and enjoy it like ice cream.

Ingredients of Cato Berry Cheesecake.

2 cups heavy whipping cream.
1 (8 ounce) package cream cheese, room temperature and soft.
3 cups of raspberries.
3 cups fresh strawberries.
1 cup blueberries.
3 teaspoons lemon juice.
4 tablespoons less sweetener.

How to make Cato Berry Cheesecake.

With a handheld blender, whisk the cream into a bowl until it reaches the top.
Add in 6oz. Mix until creamy cheese and smooth and set aside.
In another bowl, mix in the sweetener, raspberry, strawberry, lemon zest and remaining cream cheese and blend well until smooth.
Fill the cup with whipped cream, then add a layer of blueberries, then raspberry puree. Repeat this process until the layer is full of berries.
