Keto Broccoli Cheddar Bites:

Ingredients:

  • 2 cups broccoli florets, steamed and finely chopped
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a mixing bowl, combine the finely chopped broccoli, shredded cheddar cheese, eggs, almond flour, garlic powder, onion powder, salt, and black pepper. Mix well until all the ingredients are evenly combined.
  3. Scoop about 1-2 tablespoons of the mixture and form it into a ball using your hands. Place the ball onto the prepared baking sheet. Repeat this step for the remaining mixture, leaving some space between the balls.
  4. Flatten each ball slightly with the back of a spoon to form a small disc.
  5. Bake in the preheated oven for about 15-18 minutes, or until the edges turn golden brown and crispy.
  6. Remove from the oven and allow the broccoli cheddar bites to cool for a few minutes before serving.
