Ingredients:
- 2 cups broccoli florets, steamed and finely chopped
- 1 cup shredded cheddar cheese
- 2 large eggs
- 1/4 cup almond flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- In a mixing bowl, combine the finely chopped broccoli, shredded cheddar cheese, eggs, almond flour, garlic powder, onion powder, salt, and black pepper. Mix well until all the ingredients are evenly combined.
- Scoop about 1-2 tablespoons of the mixture and form it into a ball using your hands. Place the ball onto the prepared baking sheet. Repeat this step for the remaining mixture, leaving some space between the balls.
- Flatten each ball slightly with the back of a spoon to form a small disc.
- Bake in the preheated oven for about 15-18 minutes, or until the edges turn golden brown and crispy.
- Remove from the oven and allow the broccoli cheddar bites to cool for a few minutes before serving.
