INGREDIENTS:
CHEESECAKE LAYER:
- 8 oz. cream cheese
- ½ cup heavy whipping cream
- Salt
- ¼ cup powdered Erythritol
- One tsp. vanilla extract
CHERRY TOPPING:
- 1 cup frozen Keto cherries
- 2 tbsp. water
- 1 to 2 tbsp. powdered Erythritol
- ½ tsp. lemon juice
- ¼ tsp. xanthan gum
CRUST LAYER:
- One tbsp. powdered Erythritol
- ½ cup almond flour
- Two tbsp. melted butter
- Pinch of cinnamon
INSTRUCTION:
MAKE THE CHERRY TOPPING:
- Put the cherries, water, Erythritol, and lemon juice in a small saucepan.
- Bring over medium heat to a simmer.
- We mash the cherries with the help of the spoon to break them up gently.
- Then we can simmer for 5 to 7 minutes or till slightly thickened.
- We can add xanthan gum & mix thoroughly and allow cooling fully.
MAKE THE CHEESECAKE LAYER:
- We can grab a vessel and include the cream cheese in the bowl and whip the cream cheese till the cream cheese gets smooth.
- Then we can add Erythritol, salt, & vanilla, and beat it again.
- Add the heavy cream gradually and beat for two to three minutes or till it gets light and fluffy.
CRUST:
