This Keto Creamy Chicken Casserole is made with tender chicken, spaghetti squash, plenty of cheese, crispy bacon, and chives. It is amazing!

Ingredients

  • ▢4 cups shredded chicken cooked
  • ▢2 cups spaghetti squash cooked
  • ▢1 cup mozzarella cheese
  • ▢¼ cup bacon crumbles

Sauce:

  • ▢4 oz cream cheese softened
  • ▢½ cup mayo
  • ▢½ cup sour cream
  • ▢2 teaspoon garlic powder
  • ▢2 teaspoon onion powder
  • ▢1 teaspoon salt
  • ▢½ teaspoon pepper

Topping:

  • ▢1 cup mozzarella cheese
  • ▢½ cup bacon crumbles
  • ▢1 tablespoon chopped chives

Instructions

  • Preheat the oven to 350.
  • Mix together the sauce ingredients. Stir in the chicken, spaghetti squash, mozzarella, and bacon. Spread in a greased 9 x 13 baking dish.
  • Top with the remaining cheese, bacon, and chives.
  • Bake for 30 minutes or until hot and bubbly.

Notes

Nutrition: this casserole has 8 servings. Each serving is about 1.25 cups and has 3 NET carbs. I just eye up portions as I serve. For a more exact measurement weigh your casserole dish empty and then full. Divided the difference by 8 for the weight of each portion.

Substitutions: you can swap the shredded chicken for shredded turkey. It’s great to use leftover turkey from the holidays. You can swap in any cooked low carb vegetable for the spaghetti squash. Broccoli, cauliflower, spinach, and zucchini all work very well.

Prep Time: you’ll need to cook the chicken and spaghetti squash ahead of time. This will save time when you are preparing the casserole. 

To Reheat: warm the keto creamy chicken casserole in the microwave for 1-2 minutes on a microwave-safe plate. Cover it with a paper towel, so it doesn’t splatter. You can also heat in the oven at 350 degrees for 10-15 minutes or until hot.
