- INGREDIENTS:
- 1/3 cup low-carb sugar substitute
- ¼ cup unsweetened cocoa powder
- ¼ tsp. stevia concentrated powder
- 2 cups of unsweetened coconut milk
- ¼ cup heavy cream
- 1 tsp. xanthan gum
- 2 tbsp. butter
- 1 tsp. extract of vanilla
- Whipped cream (optional)
- INGREDIENT NOTES:
- SWEETENER:
- I use swerve, and stevia in this chocolate pudding; we can also make this pudding with any keto-friendly sweetener like monk-fruit.
- COCONUT MILK:
- Chocolate pudding is made with milk (coconut). Chocolate pudding is prepared with milk (almond) or hemp milk as a free-of-nuts alternative.
- XANTHAN GUM:
- We thicken the chocolate pudding with the utilization of xanthan gum as a substitute of cornstarch in keto version.
- VANILLA EXTRACT:
- We include the essence of vanilla to this chocolate pudding. We can also add chocolate extract to this pudding.
INSTRUCTION:
- Take a saucepan (medium) adds the swerve, stevia, and cocoa, and mix them with the whisk.
- Slowly add the milk (coconut) and mix it appropriately to eliminate the lumps in the chocolate pudding.
- Put the saucepan on heat (medium) and boil the mixture.
- Boil it for one minute and mix in between and then put it away from the heat.
- Add the xanthan gum and extract of vanilla and mix it properly.
- Include the butter in the chocolate pudding and mix it completely.
- Transfer the chocolate pudding to the bowl (bowl).
- Tightly wrap the chocolate pudding with the lid or plastic wrap.
- Place the chocolate pudding in the fridge to get it thick.
- Put it out from the fridge and whip it with the beater to get it fluffy, and creamy.
- Add whipped cream over the chocolate pudding and serve.
TIPS:
- You can also go for almond milk in place of coconut milk. If you are on risk of having the nut allergy, then go for hemp milk.
- Decoration of whipped cream of chocolate pudding is optional; you can omit it.
- Additionally, you may use sugar-free chocolate chips to adorn it.
