Keto Red Velvet Cake:

Ingredients: For the cake:

  • 2 cups almond flour
  • 1/3 cup cocoa powder (unsweetened)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup erythritol or your preferred keto-friendly sweetener
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup unsweetened almond milk
  • 2 teaspoons vanilla extract
  • 1 tablespoon red food coloring (gel or liquid)

For the cream cheese frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered erythritol or your preferred powdered keto-friendly sweetener

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. In a separate large mixing bowl, cream together the softened butter and erythritol until light and fluffy using an electric mixer.
  4. Beat in the eggs, one at a time, then add the sour cream, almond milk, vanilla extract, and red food coloring. Mix until well combined.

  9. While the cakes are cooling, prepare the cream cheese frosting. In a mixing bowl, beat together the softened cream cheese, softened butter, vanilla extract, and powdered erythritol until smooth and creamy.
  10. Once the cakes are completely cooled, spread a layer of cream cheese frosting on top of one cake layer. Place the second cake layer on top, and frost the top and sides of the entire cake with the remaining cream cheese frosting.
