Monte Cristo Chaffle
1 pasture-raised egg
1/2 cup colby shredded Cheese
1Tbsp almond flour
Dash cinnamon
2 slices uncured smoked ham
1 slice baby Swiss
1 tsp grass fed butter (we used Kerry gold) 1 tsp Swerve Confectioners
1 Tbsp Walden Farms Maple Syrup
INSTRUCTIONS
CHAFFLE
Bring mini waffle maker to appropriate heat.
Beat egg and Shredded cheese until roughly combined.
Add almond flour and cinnamon and beat again.
Place a dab of butter in waffle maker and heat or spray to avoid sticking
Place half of mix in waffle maker and cook until indicator light goes off then place on a cooling rack
Repeat with the remaining batter
Assembly
Spread butter on both waffle halves.
Put Swiss cheese on ham and melt cheese in microwave until gooey.
Place ham on waffle half.
Top with other waffle half.
Sprinkle sandwich with powdered sugar and top with maple syrup.
