KETO FUDGE SAUCE:
- ¼ cup heavy cream
- 2 tbsp. butter
- 2 tbsp. cocoa powder
- ¼ cup sugar-free sweetener
- Salt
- ¼ tsp. vanilla extract
KETO CARAMEL SAUCE:
VANILLA CREAM LAYER:
- One cup whipping cream
- Two tbsp. Erythritol powder
- Half teaspoon vanilla extract
TOPPINGS:
- 1/3 cup salted roasted peanuts
- Optional: Keto chocolate chips
INGREDIENTS NOTES:
HEAVY CREAM:
- We have to use full-fat heavy cream for the best texture and to make the sauce more indulgent
ALLULOSE:
- We have to use the Allulose melts well without recrystallizing, making it perfect for sauces; we can also use the monk fruit mixes or Erythritol powder as a substitute for the Allulose.
COCOA POWDER:
- We have to use unsweetened cocoa powder for the strong chocolate flavor and it has no carbs as well.
PEANUTS:
- We have to choose roasted, unsalted, or mildly salted peanuts to make the parfait crunchier and flavorful; you can also use other keto-friendly nuts like pecan or almonds as a substitute for peanuts as well.
UNSALTED BUTTER:
- We have to use unsalted butter to reduce the amount of salt in sauces; we can also use grass-fed butter as it enhances flavor and nutrition.
PURE VANILLA EXTRACT:
- We have to use pure vanilla extract for a nice aroma and to make the dessert more indulgent.
SALT:
- We can add salt to balance the sweetness of sauces and brings out their flavor and can utilize both kosher salt and sea salt.
INSTRUCTION:
- We can melt the butter in the saucepan on low flame and then we can add the cocoa, heavy cream, sweetener, and salt.
- Then cook the mixture for 2 to 3 minutes or till it gets thick by stirring it continuously and then add the vanilla and mix again.
- We can melt the butter and sweetener in the other pan on moderate heat till it gets bubbling.
- Now we can add the cream slowly and boil the sauce for 1 to 2 minutes or till it gets thick.
- Then we can add vanilla & salt and mix again and put it on the shelf to get cool.
- We can beat the vanilla; heavy cream & sweetener in a bowl till the cream gets stiff peaks.
- Then we can layer the fudge, peanuts, whipped cream, and caramel in the serving glass.
- We can garnish the dessert with chocolate chips & more nuts over the dessert and serve.
TIPS:
- We can chill the glass before assembly to make the smooth assembling.
- You can properly cool the sauce at the ambient temperature so that the whipped cream doesn’t melt easily.
- We can keep the sauces in different containers to store them and reheat them gradually as required
