Apple Topping:
- 1 medium apple, diced
- Β½ teaspoon cinnamon
- 1 teaspoon peanut butter (optional)
- 1 teaspoon maple syrup (optional)
Instructions
1. Prepare the Chia Mixture
In a bowl or jar, combine:
- Almond milk
- Greek yogurt
- Protein powder
- Chia seeds
- Peanut butter
- Vanilla extract
- Cinnamon
- Salt
Whisk well until smooth and the chia seeds are evenly distributed.
2. Let It Thicken
Allow the mixture to sit for about 5β10 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 4 hours or overnight until thick and creamy.
3. Make the Apple Topping
Add diced apples to a small pan with cinnamon and a splash of water.
Cook for 3β5 minutes until slightly softened and fragrant.
(You can also use fresh diced apples for a crunchy texture.)
4. Assemble
Divide the chia pudding into serving jars.
Top with warm cinnamon apples and an extra drizzle of peanut butter if desired.
