Keto Flaky Apple Pie Bars

For the Apple Filling:

  • 2 medium-sized zucchinis, peeled, seeded, and cut into small chunks (to mimic apple texture)
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter
  • 1/4 cup powdered erythritol or another keto-friendly sweetener
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon xanthan gum (optional, for thickening)
  • A pinch of salt

Instructions:

For the Crust and Topping:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Crust:
    • In a mixing bowl, combine the almond flour, coconut flour, powdered erythritol, baking powder, and a pinch of salt.
    • Add the cold, cubed butter to the dry ingredients and use a pastry cutter or fork to cut the butter into the mixture until it resembles coarse crumbs.
  3. Add Wet Ingredients:
    • Stir in the egg and vanilla extract until the dough comes together.
  4. Divide the Dough:
    • Divide the dough in half. Press one half into the bottom of an 8×8-inch (20×20 cm) baking dish to form the crust.
  5. Bake the Crust:
    • Bake the crust in the preheated oven for 12-15 minutes or until it’s lightly golden.

For the Apple Filling:

  1. Prepare the Zucchini:
    • In a bowl, toss the peeled and seeded zucchini chunks with lemon juice. This helps them mimic the tartness of apples.
  2. Cook the Filling:
    • In a saucepan, melt the butter over medium heat. Add the zucchini chunks, powdered erythritol, ground cinnamon, ground nutmeg, and a pinch of salt.
    • Cook the mixture for about 5-7 minutes, or until the zucchini has softened and resembles cooked apple slices. Stir in xanthan gum (if using) to thicken the filling.
    • Remove from heat.

Assembly:

  1. Assemble the Bars:
    • Spread the cooked zucchini filling evenly over the baked crust in the baking dish.
  2. Crumble Topping:
    • Crumble the remaining dough evenly over the filling to create a topping.
  3. Bake Again:
    • Return the baking dish to the oven and bake for another 20-25 minutes, or until the topping is golden brown.
  4. Cool and Slice:
    • Let the bars cool in the dish for about 30 minutes, then refrigerate until fully set.
  5. Serve:
    • Once chilled, slice your Keto Flaky Apple Pie Bars into squares and serve. Enjoy!
