Cheesy Beef Roll-Ups

Ingredients
Tortillas
- 4 large flour tortillas
(Low-carb or whole-wheat tortillas also work!)
Beef Filling
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 tablespoon garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt & pepper to taste
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- Optional: jalapeños, salsa, cilantro, crushed red pepper
How to Make Cheesy Beef Roll-Ups
1. Cook the beef
Heat olive oil in a skillet over medium heat.
Add diced onions and sauté until soft.
Stir in garlic and cook 1 minute.
Add the ground beef and cook until browned.
Drain excess grease if needed.
Season with cumin, chili powder, salt, and pepper.
Mix well and let flavors blend for 1–2 minutes.
2. Fill the tortillas
Lay tortillas flat.
Sprinkle cheese down the center of each tortilla.
Spoon warm beef mixture over the cheese.
Add extra toppings if you like (jalapeños, cilantro, salsa).
3. Roll them up
Fold the sides inward and roll tightly into burrito-shaped logs.
4. Toast or bake
Stovetop:
Place seam-side down on a skillet and cook until golden and crispy.
Oven:
Bake at 375°F (190°C) for 10–12 minutes until cheese is melted and tortillas are lightly browned.
5. Serve warm
Slice in half or serve whole with:
• Sour cream
• Salsa
• Guacamole
• Ranch
• Hot sauce
Tips for the Best Roll-Ups
• Warm the tortillas to prevent tearing.
• Add more cheese inside for extra meltiness.
• Use ground turkey or chicken for a lighter option.
• Add diced bell peppers or corn for more flavor.
• Brush tortillas with a little oil before baking for a crispier finish.
