Ingredients List
- 1/2 cup almond flour
- 1/4 cup cocoa powder
- 1/4 cup vanilla protein powder (use a clean, low-sugar variety)
- 1/4 cup erythritol (or your preferred sweetener)
- 2 tbsp almond butter (or peanut butter)
- 2 tbsp unsweetened almond milk (or any milk of choice)
- 1/2 tsp vanilla extract
- 1/4 tsp baking powder
- 1/4 tsp salt
- Optional: 1/4 cup sugar-free chocolate chips (for extra texture and flavor)
Instructions
Step 1: Mix the Dry Ingredients
In a large mixing bowl, combine the almond flour, cocoa powder, protein powder, erythritol, baking powder, and salt. Stir to combine thoroughly.
Step 2: Add the Wet Ingredients
Add the almond butter, almond milk, and vanilla extract to the dry ingredients. Stir until the mixture comes together into a thick dough. If it’s too dry, add an extra splash of almond milk, 1 tablespoon at a time, until the dough is pliable but not sticky.
Step 3: Shape the Brownie Bombs
Using your hands, roll the dough into 12 evenly sized balls. If you like, you can press a few sugar-free chocolate chips into the center of each ball for a chocolatey surprise.Step 4: Bake
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Place the brownie bombs on the sheet and bake for 8-10 minutes. They should be firm to the touch but still soft in the center.
Step 5: Cool and Serve
Let the protein brownie bombs cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely. Enjoy!
