Ingredients

  • 1½ pounds melting cheese, cubed
  • 8 ounces cream cheese, cubed
  • ¾ cup evaporated milk or whole milk (plus more if needed)
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon black pepper
  • ¼ teaspoon smoked paprika (optional)
  • 1 can (10 oz) diced tomatoes with green chiles, drained (optional)
  • 2–3 tablespoons chopped pickled jalapeños (optional)
  • Salt to taste

Step-by-Step Instructions

1. Add Ingredients to Slow Cooker

Place cubed melting cheese, cubed cream cheese, evaporated milk, and all seasonings into the slow cooker.

2. Cook Low and Slow

Cover and cook on LOW for 1½–2 hours.
Stir every 20–30 minutes to help the cheese melt smoothly.

3. Add Cheddar

Once the base is melted and smooth, stir in the shredded cheddar a handful at a time, allowing it to melt completely.

4. Add Mix-Ins

Stir in the drained diced tomatoes with green chiles and chopped jalapeños if using.

Warm for another 10–15 minutes.

5. Keep Warm for Serving

Switch slow cooker to WARM.

Stir occasionally and add a tablespoon of warm milk if the dip becomes too thick.

Taste and add salt if needed.
