Ingredients

  • 2 medium zucchini, grated
  • 2 medium carrots, grated
  • potato, grated (helps bind and crisp)
  • egg
  • ½ cup flour (or oat flour for healthier option)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 2 tbsp fresh parsley, chopped
  • 2–3 tbsp oil (for frying)

Step-by-Step Instructions

1. Prep Vegetables

  • Grate zucchini, carrots, and potato
  • Squeeze out excess moisture using a cloth or paper towel (VERY important for crispiness)

2. Mix Batter

In a bowl, combine:

  • Grated veggies
  • Egg
  • Flour
  • Salt, pepper, garlic powder
  • Parsley

Mix until well combined


3. Shape Fritters

  • Form small patties using your hands
  • Flatten slightly

4. Cook

  • Heat oil in a pan over medium heat
  • Cook fritters for 3–4 minutes per side
  • Flip when golden brown

5. Drain & Serve

  • Place on paper towel to remove excess oil
  • Serve warm
