Keto Blueberry Donuts

Ingredients
Keto Blueberry Donuts
- 1 1/2 cups of almond flour(finely milled)
- 1/2 cup coconut flour
- 1 ½ teaspoon of baking powder
- 1/4 teaspoon of sea salt
- 1/2 cup sugar substitute
- 1 teaspoon vanilla extract
- 1/2 cup of full-fat sour cream
- 3 eggs, room temperature
- 1 cup of fresh or frozen blueberries
- 1/4 cup of unsalted melted butter, cooled
Keto Icing
- 2 tablespoons of melted butter, cooled
- 3/4 cup of confectioners sugar-substitute
- 1/4 teaspoon of sea salt
- 1/2 teaspoon of vanilla extract
- 3-4 tablespoons of or hot water
Instructions
Keto Blueberry Donuts
- To 350 degrees, pre-heat oven.
- Grease well two donut pans(6 cavity).
- Melt 1/4 cup unsalted butter melted and put it aside.
- Take a mixing bowl(large) and combine the salt, coconut flour, sugar substitute, baking powder, and almond flour until it gets well combined.
- Add the sour cream, melted butter, vanilla extract and the Three eggs one at a time to the dry ingredients.
- Using an electric mixer, mix the batter until it gets fully incorporated.
- Fold in the blueberries. For this recipe, note that you can use fresh or frozen blueberries.
- Before adding them to the batter, if using frozen there is no need to defrost them.
- Into the two prepared donut pans, pipe the batter. To a large zip lock bag, I added the batter that I cut the tip of and then into the donut pan cavities, piped the batter.
- Into the donut pans, I lightly tapped the batter using my fingers.
- Note that just to the rim, you will be filling the donut pans because these donuts do not rise much.
- For 25-30 minutes, bake donuts until donuts are fully cooked(inserted toothpick comes out clean).
- At room temperature, allow the Keto Donuts to fully cool before taking them out of the mold.
- Place them on a baking rack, once the donuts are removed from the donut mold and proceed to make the icing.
Keto Icing
- To a medium-sized bowl add the melted butter.
- Add confectioners, sugar substitute, vanilla extract, and sea salt to a bowl.
- Mix well and then add the(hot water). Start with Three tbsp. and add the additional tbsp. if the consistency is too thick.
- Into the icing, quickly dip the donuts and to dry, set them on a baking rack. On the surface, the donuts will form a thin frosted shell.
Store Your Donuts
- Store them in the refrigerator, once the keto blueberry donuts icing has had time to set in a sealed container for up to 5 days. Since the icing hardens, you can place the donuts on top of each other. By placing them in a freezer-proof container for up to 3 weeks, you can also freeze your donuts.
- For the best flavor, allow your donuts to come to room temperature.
