Homemade Egg Noodles From Scratch:

Ingredients:

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon salt
  • Water, as needed

Instructions:

  1. In a large mixing bowl, combine the all-purpose flour and salt.
  2. Create a well in the center of the flour mixture and crack the eggs into the well.
  3. Gently whisk the eggs using a fork, gradually incorporating the flour from the sides until a dough starts to form.
  4. Once the dough becomes too thick to mix with a fork, use your hands to knead it in the bowl. If the dough feels too dry, add a small amount of water, one tablespoon at a time, until the dough comes together.
  5. Transfer the dough to a lightly floured surface and continue kneading for about 5-7 minutes until the dough becomes smooth and elastic.
  6. Shape the dough into a ball and cover it with a clean kitchen towel. Let it rest for 20-30 minutes to allow the gluten to relax.
  7. After the resting time, divide the dough into two equal portions.
  8. Take one portion and flatten it with your hands. Roll it out with a rolling pin into a thin sheet, about 1/8 inch thick.
  9. Dust the rolled-out dough with a little flour to prevent sticking. Fold the sheet of dough into a loose roll.
  10. Using a sharp knife, cut the roll into desired noodle width. You can make thin noodles for spaghetti-like noodles or wider noodles like fettuccine.
  11. Unroll the cut noodles and lightly dust them with flour to prevent them from sticking together. Repeat the process with the other portion of dough.
  12. Bring a large pot of salted water to a boil. Add the noodles and cook for about 3-4 minutes until they are tender but still slightly firm (al dente).
  13. Drain the noodles and rinse them with cold water to stop the cooking process.
  14. Toss the noodles with a little oil to prevent them from sticking together if you’re not using them immediately.
