Keto Garlic Rolls:

Ingredients:

  • 2 cups almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2 tablespoons melted butter
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons cream cheese
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon melted butter (for brushing)
  • Additional garlic powder and dried parsley (for sprinkling)

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, baking powder, garlic powder, dried oregano, dried basil, and salt.
  3. In a separate microwave-safe bowl, melt the mozzarella cheese and cream cheese together. This can be done in the microwave in 30-second intervals, stirring in between, until fully melted.
  4. Add the melted cheese mixture, eggs, minced garlic, chopped parsley, and melted butter to the dry ingredients. Mix well until a dough forms.
  5. Divide the dough into 8 equal portions and roll each portion into a ball. Place the dough balls on the prepared baking sheet.
  6. Bake in the preheated oven for about 15-18 minutes, or until the rolls are golden brown.
  7. Remove the rolls from the oven and brush the tops with melted butter. Sprinkle with additional garlic powder and dried parsley.
  8. Allow the rolls to cool slightly before serving.
