Ingredients (Makes 10–12 Bars)

  • 2 cups rolled oats
  • 1 cup creamy peanut butter
  • Β½ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Β½ teaspoon salt
  • ΒΎ cup dried cranberries
  • Β½ cup chopped nuts (almonds, walnuts, or peanuts)
  • ΒΌ cup pumpkin seeds or sunflower seeds (optional)
  • ΒΌ cup shredded coconut (optional)
  • ΒΌ cup mini chocolate chips (optional)

Instructions

1. Prepare the Mixture

  • Line an 8Γ—8 inch baking dish with parchment paper.
  • Add rolled oats, dried cranberries, chopped nuts, seeds, coconut, and chocolate chips into a large bowl.
  • Mix everything together.

2. Make the Peanut Butter Base

  • Warm peanut butter and honey/maple syrup in a small saucepan over low heat.
  • Stir until smooth and combined.
  • Remove from heat and mix in vanilla extract and salt.

3. Combine Everything

  • Pour the peanut butter mixture over the dry ingredients.
  • Mix well until all oats and toppings are evenly coated.

4. Press & Chill

  • Transfer the mixture into the lined baking dish.
  • Press firmly using a spoon or spatula so the bars hold together.
  • Refrigerate for 2–3 hours until firm.

5. Slice & Serve

  • Remove from the fridge.
  • Cut into bars or squares.
  • Enjoy as a quick snack anytime!
