Carrot Chaffle Cake Recipe:

Ingredients:

  • 2 medium-sized carrots, grated
  • 4 large eggs
  • 1/4 cup almond flour
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons coconut flour
  • 2 tablespoons granulated sweetener (such as erythritol or stevia)
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Cooking spray or oil for greasing

Cream Cheese Frosting:

  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sweetener (such as powdered erythritol or powdered stevia)
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your waffle maker according to its instructions.
  2. In a mixing bowl, whisk the eggs until well beaten.
  3. Add the grated carrots, almond flour, shredded mozzarella cheese, coconut flour, sweetener, baking powder, ground cinnamon, ground nutmeg, salt, and vanilla extract to the bowl. Mix well until all ingredients are combined and a batter is formed.
  4. Lightly grease the waffle maker with cooking spray or oil.
  5. Spoon about 1/4 to 1/3 cup of the batter onto the preheated waffle maker. Close the lid and cook until the chaffle is golden brown and cooked through. Repeat the process with the remaining batter.
  6. Once all the chaffles are cooked, let them cool on a wire rack.
  7. In a separate bowl, prepare the cream cheese frosting by combining the softened cream cheese, powdered sweetener, and vanilla extract. Beat until smooth and creamy.
  8. Once the chaffles have cooled, spread a layer of cream cheese frosting on top of each chaffle. Stack the chaffles to create a layered cake. You can also frost the sides if desired.
  9. Optionally, you can sprinkle some chopped walnuts or shredded carrots on top for garnish.
  10. Slice the carrot chaffle cake into servings and enjoy!
