2 cups almond milk or coconut milk
6 tbsp chia seeds
1/2 tsp vanilla extract
1 tsp liquid stevia (optional)
4 tbsp sugar free jam of choice …
2 scoops vegan vanilla protein powder (optional)
sliced almonds for topping (optional)
Whisk the chia seeds and ½ cup of almond or coconut milk in a small bowl. Add the vanilla, protein powder and the remaining almond or coconut milk, whisking together. Sweeten to taste with your favorite liquid sweetener. Refrigerate and stir well after 30 minutes to prevent the chia seeds from clumping together at the bottom of the bowl. Refrigerate overnight. Layer the thickened chia pudding with 1 tbsp of sugar free jam in serving bowl or in a small portable jar. Stores up to 5 days in the refrigerator.
