Creamy Chicken, Bacon and Cauliflower Bake
1TBSP Olive oil
2 TBSP Butter
1 TBSP Minced garlic
1 Small cauliflower trimmed & cut into bite sized florets
3 Slices of bacon cut into strips
1 Bunch of chopped spinach
1/2 Cup of heavy whipping cream
2 TSP thyme
2 Shallots or green onions
6 Chicken boneless thighs
1/2 Cup cheese
Salt & pepper to taste
*Heat oven 350 degrees & prepare and grease 9X13 baking dish
*In a large pan, heat olive oil and butter. Once melted, add cauliflower and bacon. Cook for approximately 8 to 10 minutes until lightly brown.
*Add spinach to the pan. Cook stirring for about 2 minutes. Remove from heat then add hwc, thyme, and half of the onions. Combine together then transfer to prepared dish.
* In that same pan, spray oil or add butter then add chicken. Season with salt and pepper. Brown on both sides for approximately 2 minutes.
*Transfer chicken into the pan with the cauliflower mixture. Sprinkle cheese on top.
*Bake for 20- 30 minutes or until golden brown. Stand for 5 minutes. Top with the remaining onions.
