4 med. Zucchini
1 medium onion, chopped
1/2 c. chopped sweet peppers
1 clove garlic, minced
pepperoni slices
1 c. or so Tomato or pizza sauce
1/4 c. Mozzarella or Monterey jack and cheddar cheese per zucchini
Sliced tomato
Olive oil

Cut zucchini in half lengthwise and brush with olive oil.

Top with pizza sauce, tomatoes, onions, minced garlic, pepperoni, and shredded Monterey jack or mozzarella and cheddar cheese.

Bake 30-40 mins at 375 degrees.
