“I’ve made this dozens of times and the family cannot get enough!”

Ingredients:

Red wine vinegar1 tablespoon
Dried oregano2 teaspoons
Ground cumin1 teaspoon
Paprika1 teaspoon
Ground coriander1/2 teaspoon
Salt1/2 teaspoon
Black pepper1/2 teaspoon

For the Tzatziki Sauce:

Greek yogurt1 cup
Grated cucumber (excess water squeezed out)1/2 cucumber
Minced garlic2 cloves
Lemon juice1 tablespoon
Olive oil1 tablespoon
Chopped fresh dill1 tablespoon (or 1 teaspoon dried dill)
Salt and pepperTo taste

For the Gyros Assembly:

Pita breads or flatbreads4-6
Chopped tomatoes1 cup
Sliced red onion1/2 cup
Shredded lettuce1 cup
Crumbled feta cheese (optional)1/2 cup

Instructions:

Serve: Fold pita bread around fillings and serve immediately

Prepare the chicken marinade: Whisk together all marinade ingredients in a large bowl. Add chicken and coat well. Refrigerate for at least 1 hour, preferably 2-4 hours.

Make the tzatziki sauce: Combine all tzatziki ingredients in a medium bowl. Mix well and refrigerate.

Grill the chicken: Preheat grill or grill pan. Grill chicken for 5-7 minutes per side, or until internal temperature reaches 165°F. Let rest before slicing.

Assemble the gyros: Warm pita bread on grill or in skillet. Spread tzatziki sauce on pita. Add grilled chicken, tomatoes, red onion, lettuce, and feta cheese (if using).
