Keto Garlic Rolls

- Large Cookie Scoop

Ingredients:
- 1½ cups shredded mozzarella cheese
- 3 -oz cream cheese softened
- 2 large eggs, room temperature
- 1 cup + 2 Tbsp almond flour
- 1½ tsp baking powder
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp unsalted butter melted
- 1 garlic clove crushed
- ¼ cup grated parmesan cheese
Instructions:
- Preheat oven to 400°. Line a baking sheet with parchment paper.
- In a microwave-safe bowl, combine mozzarella cheese and softened cream cheese; microwave on high until melted. Stir until smooth.
- Add eggs and mix well. Stir in the dry ingredients – almond flour, baking powder, onion powder, garlic powder, salt, and black pepper.
- Using a large cookie scoop, scoop dough into balls and place on prepared pan.
- In a small bowl, combine melted butter and minced garlic. Brush garlic butter over the tops of the rolls. Sprinkle rolls with grated parmesan cheese.
- Bake bread in a preheated oven for 14 to 16 minutes, until golden brown. Brush warm rolls with any leftover garlic butter.
Notes:
- I use King Arthur Flour brand almond flour. I also like Bob’s Red Mill Almond Flour.
- Look for superfine almond flour or blanched almond flour.
- Avoid using almond meal. You won’t get the fluffy texture without almond flour.
- Make sure to use baking powder and NOT baking soda.
- Can I use coconut flour instead of almond flour? No, coconut flour requires more moisture than almond flour.
- Can Keto Rolls be frozen? Yes. Bake the rolls and cool to room temperature. Transfer rolls to a freezer bag and store in the freezer for up to 3 months,
- Reheat rolls in the microwave.
- Store leftover rolls in an airtight container in the refrigerator.
