Keto Garlic Rolls

Equipment:

  • Glass Mixing Bowls
  • Large Cookie Scoop
  • Parchment Paper
  • Rimmed Baking Sheet

Ingredients:

  • 1½ cups shredded mozzarella cheese
  • 3 -oz cream cheese softened
  • 2 large eggs, room temperature
  • 1 cup + 2 Tbsp almond flour
  • 1½ tsp baking powder
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp unsalted butter melted
  • 1 garlic clove crushed
  • ¼ cup grated parmesan cheese

Instructions:

  • Preheat oven to 400°. Line a baking sheet with parchment paper.
  • In a microwave-safe bowl, combine mozzarella cheese and softened cream cheese; microwave on high until melted. Stir until smooth.
  • Add eggs and mix well. Stir in the dry ingredients – almond flour, baking powder, onion powder, garlic powder, salt, and black pepper.
  • Using a large cookie scoop, scoop dough into balls and place on prepared pan.
  • In a small bowl, combine melted butter and minced garlic. Brush garlic butter over the tops of the rolls. Sprinkle rolls with grated parmesan cheese.
  • Bake bread in a preheated oven for 14 to 16 minutes, until golden brown. Brush warm rolls with any leftover garlic butter.

Notes:

  • I use King Arthur Flour brand almond flour. I also like Bob’s Red Mill Almond Flour.
    • Look for superfine almond flour or blanched almond flour.
    • Avoid using almond meal. You won’t get the fluffy texture without almond flour.
  • Make sure to use baking powder and NOT baking soda.
  • Can I use coconut flour instead of almond flour? No, coconut flour requires more moisture than almond flour.
  • Can Keto Rolls be frozen? Yes. Bake the rolls and cool to room temperature. Transfer rolls to a freezer bag and store in the freezer for up to 3 months,
    • Reheat rolls in the microwave.
  • Store leftover rolls in an airtight container in the refrigerator.
