KETO HAM AND CHEESE SLIDERS

Low-carb sliders stuffed with ham & cheese, topped with a buttery mustard glaze.

INGREDIENTS

For the sweet rolls:

  • 1 1/2 cup mozzarella cheese
  • 2 oz. cream cheese
  • 1 1/4 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1/4 cup parmesan cheese, grated
  • 2 teaspoons monk fruit sweetener
  • 3 eggs (1 for egg wash)
  • 2 tablespoons melted butter

For the sliders:

  • 3 tablespoons butter, melted
  • 2 teaspoons Dijon mustard
  • 1 teaspoon liquid aminos or Tamari
  • 2 teaspoons poppy seeds
  • 2 teaspoons dried minced onion
  • 10 thin slices of deli ham (about 4 oz.)
  • 5 slices of Swiss cheese

DIRECTIONS

To make the rolls:

Preheat the oven to 350 degrees Fahrenheit. Grease a 9-inch round pan to avoid any sticking and set it aside.

In a medium-sized bowl, add almond flour, coconut flour, baking powder, grated parmesan cheese, and monk fruit (or preferred keto sweetener) and mix well. Set aside.

In a large microwavable bowl, add mozzarella and cream cheese. Microwave in 30-second intervals until cheese is completely melted.

Once the cheese is melted, add in the almond flour/coconut flour mixture, and mix well. Then add in 2 eggs and 1 tablespoon of melted butter, and mix well until all is kneaded together. I like to use my hands during this process so that it’s all kneaded together well.

Roll ten 2-inch-sized balls with the dough, and place them all in the prepared baking pan with a little bit of space between them so they’re not touching.

Brush the top of the rolls with an egg wash (one egg mixed with a little water) and place in the oven to bake for 18-22 minutes, until slightly browned. Make sure to check halfway as the cooking time depends on your oven and how big your rolls are. Remove from the oven and set aside.

To make the mustard-poppy seed glaze:

In a small bowl, mix up the butter, mustard, liquid aminos, poppy seeds, and dried minced onion. Set aside.

To assemble the sliders:

Slice the tops and bottoms of all the rolls, and set the tops aside. Put the bottoms of the rolls in the 9-inch baking dish, and place a slice of ham folded on each roll. Cut each slice of cheese in half and fold it in half on top of the ham on each roll. Place all the tops of the rolls back on.

Use a basting brush to brush on the mustard-poppy seed mixture all over the top and sides of each roll. Place them back into the oven for 10 to 15 minutes until the cheese is nice and melted. Enjoy warm.
