Ingredients

  • 3 tablespoons olive oil
  • ½ tablespoon Italian seasoning
  • ½ teaspoon garlic salt
  • 1 lb chicken breast cut into 1″ cubes
  • 4 oz pepperoni
  • 1 bell pepper sliced
  • ½ white onion thinly sliced
  • ¼ cup sliced black olives
  • 1 cup crushed tomatoes
  • 2 cups shredded low-moisture mozzarella

Instructions

  • Preheat the oven to 400° F.
  • Heat the oil in a 10.5″ cast iron skillet over medium high heat. Season the chicken with the garlic salt and Italian seasoning. Sear the chicken for 3-4 minutes per side until browned and cooked through.
  • Add in the remaining ingredients except for the cheese and cook 2-3 minutes until the vegetables start to slightly soften. Top with cheese and transfer to the oven for 15 minutes until the cheese is bubbly.
