KETO PIZZA CHAFFLES – QUICK AND EASY

You’ve got to try this easy, low-carb pepperoni pizza version of the famous keto “Chaffle”! Keto pizza chaffles are quick to prepare, and make a fast and easy low-carb lunch!

INGREDIENTS

Chaffle Crust

  • 1 egg
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 tsp Italian Herb blend
  • pinch garlic powder

Pizza Toppings

  • 2 tbsp tomato sauce
  • 1/2 cup mozzarella cheese, shredded
  • 6 pepperoni (optional)

INSTRUCTIONS

  1. Preheat the waffle maker according to manufacturer instructions. Preheat the oven to 400.
  2. In a small mixing bowl, mix together egg, cheddar cheese, garlic, and herbs. Stir until well combined.
  3. If using a mini waffle maker, pour one half of the waffle batter into the waffle maker. (Use all of the batter for a large Belgian waffle maker.)
  4. Cook for 3-4 minutes or until golden brown. Repeat with the second half of the batter.
  5. Top the chaffle crusts with tomato sauce, cheese, and pepperoni. Place on a small baking sheet and bake in the oven until cheese is melted, about 5 minutes.
