Ingredients:

  • 1 pound ground beef (preferably lean)
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning (ensure it’s low-carb and without added sugars)
  • 4 cups lettuce, shredded (romaine or iceberg)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup sliced black olives
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons salsa (ensure it’s low-carb and without added sugars)
  • Fresh cilantro leaves (optional, for garnish)
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a skillet over medium heat. Add the ground beef and cook until browned and cooked through. Drain any excess fat.
  2. Sprinkle the taco seasoning over the cooked ground beef and stir well to combine. Cook for an additional 2-3 minutes to allow the flavors to meld. Remove from heat and let it cool slightly.
  3. In a large salad bowl, add the shredded lettuce, cherry tomatoes, red onion, sliced black olives, and cheddar cheese.
  4. Add the seasoned ground beef to the salad bowl and toss everything together.
  5. In a small bowl, mix together the sour cream and salsa. Season with salt and pepper to taste.
  6. Drizzle the sour cream and salsa mixture over the salad and toss to combine.
  7. Garnish with fresh cilantro leaves, if desired.
