Keto Taco Stuffed Tomatoes

Ingredients:

4 medium tomatoes1 lb ground beef (or ground turkey, chicken, or a meatless substitute)1 packet of taco seasoning (check for low-carb options)1 cup shredded cheddar cheese (or any cheese of your choice)1/2 cup diced avocado1/4 cup diced red onion1/4 cup chopped fresh cilantroSour cream (for serving)Salt and pepper, to taste

Instructions:

Preheat your oven to 375°F (190°C).

Cut the tops off the tomatoes and carefully scoop out the seeds and inner flesh. Set the hollowed tomatoes aside.

In a skillet over medium heat, cook the ground beef until browned. Drain excess fat if needed.

Add the taco seasoning to the cooked meat according to the packet instructions. Mix well.

Fill each hollowed tomato with the seasoned ground meat.

Top each tomato with shredded cheese.

Place the stuffed tomatoes on a baking dish and bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let them cool slightly.

Top each tomato with diced avocado, red onion, and chopped cilantro.

Serve with a dollop of sour cream on top.
