Tacos Al Pastor

This is my low carb version of the famous Al Pastor street taco. Traditionally, grilled pineapple would be tucked in with the charred meat but pineapple doesn’t fit into my low carb lifestyle. I’m turning my al pastor on a Joetisserie spit over charcoal with a little smoke to put it over the top delicious.

My recipe is very flavorful but not too spicy. If you want more heat, add peppers to your al pastor taco.

Ingredients:

3 pounds boneless pork butt

I-2 guajillo peppers

2 TBSP achiote paste

1 TBSP chipotle

2 cloves garlic peeled

½ tsp. cumin powder

1 tsp. Mexican oregano

2 TBSP vinegar

¼ cup orange juice

1 TBSP kosher salt

Keto friendly street tacos (tortillas)

Directions:

Seed and soak the guajillo pepper in hot water to soften and drain.

Add guajillo, achiote, chipotle, garlic, cumin, oregano, vinegar, orange juice and salt to a processor. Mix well to combine.

Slice the pork butt into ¼” slices.

Add the pork to a Ziploc bag and pour in the marinade, massage to coat.

Marinate in the fridge for 3-24 hours.

When ready thread the pork pieces onto a rotisserie rod and clamp securely.

Discard marinade.

Preheat grill to medium high.

Spin over medium high heat to char/grill. If you don’t have a rotisserie spit, you can grill or broil to get the char.

Shave the cooked pork into thin ribbon pieces.

Serve on warmed low carb/keto friendly street taco tortillas.

Toppings:

Salsa verde

Avocado slices

Chopped onion

Cilantro

Shredded cheese

Shredded lettuce

Sour cream

Pickled jalapenos

Diced green chilies

Fire roasted peppers

Shaved grilled pineapple if it fits into your diet.

Notes:

Achiote and guajillo are key ingredients and can be purchased on Amazon or at your local Mexican market.
