Ingredients (Makes 10β12 Cookies)
Dry Ingredients:
- 1 cup rolled oats
- Β½ cup almonds, chopped
- Β½ cup walnuts, chopped
- ΒΌ cup pumpkin seeds
- ΒΌ cup sunflower seeds
- ΒΌ cup shredded coconut (unsweetened)
- ΒΌ cup dried cranberries or raisins (optional)
- Β½ teaspoon cinnamon
- Pinch of salt
Wet Ingredients:
- 2 ripe bananas, mashed
(or Β½ cup unsweetened applesauce) - ΒΌ cup natural peanut butter or almond butter
- 1 teaspoon vanilla extract
- 2 tablespoons honey or maple syrup (optional)
Instructions
1. Prepare the Mixture
In a large bowl, mash the bananas until smooth.
Add:
- Peanut butter
- Vanilla extract
- Honey/maple syrup (if using)
Mix well.
2. Add Dry Ingredients
Add oats, nuts, seeds, coconut, cinnamon, and salt.
Stir everything together until a thick cookie dough forms.
Let the mixture rest for 5 minutes so the oats absorb moisture.
3. Shape the Cookies
Line a baking tray with parchment paper.
Scoop portions of the mixture and shape them into cookies using your hands or a spoon.
Flatten slightly because they will not spread much while baking.
4. Bake
Bake at:
180Β°C (350Β°F) for 12β15 minutes
until golden and slightly crispy around the edges.
5. Cool & Serve
Allow cookies to cool for 10 minutes before serving.
