Keto Blueberry Donuts


  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/3 cup powdered erythritol or any keto-friendly sweetener of your choice
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 4 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blueberries

Glaze (optional):

  • 1/4 cup powdered erythritol
  • 1-2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract


  1. Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or butter.
  2. In a large mixing bowl, whisk together the almond flour, coconut flour, powdered sweetener, baking powder, and salt.
  3. In a separate bowl, whisk together the melted butter, eggs, almond milk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until well combined. The batter should be smooth and slightly thick.
  5. Gently fold in the fresh blueberries.
  6. Spoon the batter into the greased donut pan, filling each cavity about 2/3 full.
  7. Bake in the preheated oven for 15-20 minutes or until the donuts are firm to the touch and slightly golden brown around the edges.
  8. Remove the donuts from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Optional Glaze:

  1. In a small bowl, whisk together the powdered erythritol, heavy cream, and vanilla extract until you get a smooth glaze.
  2. Once the donuts are completely cooled, dip the top of each donut into the glaze and let the excess drip off.
  3. Place the glazed donuts back on the wire rack and allow the glaze to set for a few minutes.
