Ingredients:
For the crust (optional):
- 1 cup almond flour or crushed nuts (such as pecans or walnuts)
- 4 tablespoons melted butter
- 2 tablespoons keto-friendly sweetener (such as erythritol or stevia)
For the cheesecake filling:
- 16 oz (2 packages) cream cheese, softened
- 1 cup heavy cream
- 1/2 cup keto-friendly sweetener (adjust to taste)
- 1 teaspoon vanilla extract
- Juice and zest of 1 lemon (optional, for flavor)
Instructions:
- Prepare the Crust (if using):
- In a bowl, mix the almond flour or crushed nuts with the melted butter and sweetener.
- Press the mixture into the bottom of a 9-inch pie dish or springform pan to create the crust layer.
- Place the crust in the refrigerator to set while you prepare the filling.
- Make the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese until smooth and creamy.
- Add the heavy cream, keto-friendly sweetener, vanilla extract, lemon juice, and lemon zest (if using).
- Beat the mixture until all ingredients are well combined and the mixture has thickened.
- Assemble and Chill:
- Pour the cheesecake filling over the prepared crust (if using) in the pie dish or springform pan.
- Smooth the top with a spatula.
- Chill and Set:
- Cover the cheesecake with plastic wrap or a lid and place it in the refrigerator.
- Allow the cheesecake to chill and set for at least 4 hours, or preferably overnight. This will allow the flavors to develop and the cheesecake to firm up.
- Serve:
- Once the cheesecake is well chilled and set, slice and serve.
- You can enjoy it as is or add keto-friendly toppings such as fresh berries, a drizzle of sugar-free chocolate sauce, or a dollop of whipped cream.
