KETO SPINACH DIP
INGREDIENTS
- 5 oz cream cheese
- 4 cups baby spinach — finely chopped
- 1 tbsp butter
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/3 cup heavy cream
- 1/8 tsp nutmeg — optional
- 1/2 cup artichoke hearts — chopped
- 1 cup mozzarella cheese
- 1/4 cup parmesan cheese — optional

INSTRUCTIONS
- Melt the butter in a saucepan. Add the chopped spinach, cook for 2 minutes, until wilted. Add salt, pepper, garlic and nutmeg.
- Add the cream cheese, with the heat on low, using a wooden spoon or spatula, incorporate the cream cheese into the spinach. Add the cream. Add the artichoke hearts. Mix in 1/2 of the mozzarella cheese.
- Transfer to a small oven safe baking dish. Top with the remaining mozzarella and parmesan cheese. Bake for 20-15 minutes at 350 F, until the cheese is bubbly. Serve.
